Under the guidance of chef de cuisine Javier Amador from the recently Michelin Guide-recognized Enye, guests embarked on a flavorful journey across Spain's diverse regions. The tasting menu began with savory bites from the West, featuring Croquetas de Jamón and local-inspired Cebu Lechon Tacos.
The first official course presented a show-stopping Ensalada de Burrata, followed by a southern-inspired Salmon Crudo Escabeche that offered a refreshing interpretation of a Filipino favorite. The culinary voyage continued eastward with the intense flavors of Valencia through classic Paella Negra.
Meat Lovers' Paradise and Sweet Finale
For the main attractions, the menu featured two meat-centric dishes that delighted carnivores. The Panceta Crujiente combined crispy pork belly and scallops with prawn and pork jus, while the Txuleton from Spain's northern Basque Country showcased grilled US prime ribeye.
